2/3 Cup Plant Based Yogurt 
1 Tbs Maple Syrup 
5-10 Drops Peppermint Extract
Cacao Nibs, for Topping 
Directions: Press cookies into lined cupcake tins. Mix together yogurt, maple syrup, and peppermint extract. Start with 3-4 drops, stir, and taste before adding more. Scoop a generous spoonful of yogurt mixture onto each cookie, sprinkle with cacao nibs, and place in freezer for 10 minute to set up. Devour!
