Vanilla Spice Energy Balls

Ingredients

  • 9 Emmy’s Organics Vanilla Bean Coconut Cookies (1 large bag)
  • 1/2 cup almond flour
  • 2 TB coconut oil, melted
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 scoop collagen peptides (optional)
  • Unsweetened shredded coconut for topping
  1. In a food processor blend all ingredients until a “dough” forms, about 2 minutes.
  2. Roll into 11 balls.
  3. Dip balls into shredded coconut.
  4. Refrigerate for 30 minutes. Enjoy!
