Vanilla Coconut Macaroons by @thenakedbroccoli
6 Emmy’s Organics Vanilla Coconut Cookies
2 tbsp coconut flour
1/4 cup maple syrup
Pinch of sea salt
4 tbsp vegan vanilla frosting
1 tsp beet juice
4 tbsp berry jam
Crushed beets and blueberries for garnish
- Using your hands, break apart coconut cookies into a bowl
- Add coconut flour, maple syrup, and pinch of sea salt and mix well
- Using a mini cookie scoop, scoop cookies onto a parchment-paper lined baking sheet
- Bake at 350 F for 10-15 minutes
- In the meantime, add beet juice to frosting and set aside
- Let cookies cool and top half with vanilla frosting and crushed beets and half with berry jam and blueberries
- Store in the fridge for up to a week
