Vanilla Coconut Macaroons

6 Emmy’s Organics Vanilla Coconut Cookies

2 tbsp coconut flour

1/4 cup maple syrup

Pinch of sea salt

4 tbsp vegan vanilla frosting

1 tsp beet juice

4 tbsp berry jam

Crushed beets and blueberries for garnish

 

  1. Using your hands, break apart coconut cookies into a bowl
  2. Add coconut flour, maple syrup, and pinch of sea salt and mix well
  3. Using a mini cookie scoop, scoop cookies onto a parchment-paper lined baking sheet
  4. Bake at 350 F for 10-15 minutes
  5. In the meantime, add beet juice to frosting and set aside
  6. Let cookies cool and top half with vanilla frosting and crushed beets and half with berry jam and blueberries
  7. Store in the fridge for up to a week
