Tropical Mango Tartlets by @beachsidekitchen
These are creamy, refreshing and just the right amount of sweet. The best part? Only 3 ingredients! You could use any flavor of Emmy's Coconut Cookies but the Dark Cacao is amazing!
-1/4 cup yogurt of choice (greek or coconut yogurt all work great!)
-Cut mango into 2 halves around seed, peel skin off (trick: you can slide it off with the edge of a wine glass), slice into thin strips length-wise.
-Line muffin tins with parchment paper or coconut oil
-Press cookies into tin (one per tin) and up the side so it has a small crust
-Scoop about 1 Tbs yogurt onto each cookie
-Starting on the outside, swirl mango around each cookie pressing gently into yogurt, working your way towards the center, creating the swirl.
