Salted Caramel Cookie Dessert Pizza by @danishealthyeats

Ingredients:
Base:
9 Emmy's Organics Vanilla Bean Coconut Cookies
For the salted caramel:
1/4 cup maple syrup
1 tsp coconut oil, melted
2 tbsp cashew butter
Pinch of sea salt
Toppings:
Banana or other fruit of choice
Chocolate for drizzling
Chopped nuts, seeds, etc.
Coconut chips
Instructions:
To assemble the cookie pizza dough, place the bag of Emmys vanilla bean cookies in a food processor and pulse until crumbly.
Taking small handfuls of the mixture, press onto a parchment-lined baking tray and form into mini pizzas. I made four medium sized pizzas, but you can make them as little or as large as you’d like.
Make the salted caramel spread by combining all ingredients together. If it is a little runny, add a little more cashew butter until reaches the perfect consistency. Spread a little on each pizza.
Top with whatever toppings you like! I drizzled some melted stevia-sweetened chocolate, added some chopped nuts, sliced banana, and a little sprinkle of coconut chips.
