Peanut Butter Chocolate Silk Pie Bars by @beachsidekitchen
CRUST:
9 Emmy's Organics Peanut Butter Coconut Cookies
3 Tbs Creamy Peanut Butter
1 Tbs Almond Flour
FILLING:
3/4 Cup Full Fat Coconut Milk
1 Cup Dark Chocolate Chips
Pinch of Salt
DIRECTIONS:
-Pulse crust ingredients in food processor or blender until combined. Press into lined 8x8 baking pan.
-Next, melt chocolate chips in microwave on 30 second intervals stirring often.
-Once melted, process coconut milk and melted chocolate in food processor with a pinch of salt until combined.
-Pour chocolate filling over crust and spread until evenly coated. Refrigerate for 1 hour, slice and serve.
