Peanut Butter and Jelly Coconut Cookie Sandwiches

6 Emmy’s Organics Peanut Butter Coconut Cookies

1/4 cup unsalted peanut butter

1/2 tsp vanilla extract

2 tbsp spelt flour

1/2 tsp baking powder

1/4 tsp Himalayan pink salt

Peanut butter & strawberry jelly to stuff cookie sandwiches

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper
  2. Place cookies, unsalted peanut butter, vanilla extract, spelt flour, baking powder, and salt in a food processor
  3. Turn food processor on high until a cookie-like dough develops
  4. Scoop dough into 2 tbsp balls onto parchment paper
  5. Flatten slightly with the bottom of a glass cup and bake for 10 minutes
  6. Let cool and stuff with peanut butter and jelly as you wish
  7. Store cookies in the fridge for up to a week
  8. Enjoy!
