Serves: 12

Time: Prep: 10 min. Setting time: 2-4 hours.

 

Ingredients:


Crust:

Emmys Organics Lemon Ginger Coconut Cookies

 

Filling:

2 cups soaked cashews

Zest of 1 lemon

1/2 cup freshly squeezed lemon juice

1/3 cup maple syrup

2 tbsp melted coconut oil

1 tbsp poppyseed

Pinch of sea salt

1 tsp vanilla

 

Instructions:

 

  1. Add Emmys Organics cookies to a food processor and pulse until a crumbly dough forms. Press into the bottom of prepared baking dish.
  2. Add all filling ingredients, besides the poppy seeds, to a food processor and blend until completely smooth. Once smooth, stir in the poppy seeds.
  3. Spread filling evenly over dough and place in the freezer to set (2-4 hours or overnight), before slicing!
  4. I topped mine with some extra lemon slices for fun! Enjoy!
