No Bake Lemon Poppyseed Cheesecakes by @danishealthyeats
Time: Prep: 10 min. Setting time: 2-4 hours.
2 cups soaked cashews
Zest of 1 lemon
1/2 cup freshly squeezed lemon juice
1/3 cup maple syrup
2 tbsp melted coconut oil
1 tbsp poppyseed
Pinch of sea salt
1 tsp vanilla
- Add Emmys Organics cookies to a food processor and pulse until a crumbly dough forms. Press into the bottom of prepared baking dish.
- Add all filling ingredients, besides the poppy seeds, to a food processor and blend until completely smooth. Once smooth, stir in the poppy seeds.
- Spread filling evenly over dough and place in the freezer to set (2-4 hours or overnight), before slicing!
- I topped mine with some extra lemon slices for fun! Enjoy!
