Mint Chocolate Chip Coco Cream by @thekindcoconut
(non-dairy ice cream)

Ingredients:
- 3 Emmy's Organics Vanilla Bean Coconut Cookies
- 3 frozen bananas
- ½ cup full fat coconut milk
- ⅓ cup fresh mint leaves *chopped
- 2 tbsps coconut sugar
- 1 tbsp vanilla bean powder
- 1-2 tsps green spirulina or matcha powder *optional for color
- non-dairy chocolate chips or cacao nibs
Method:
- Add everything except chocolate to a high speed blender. Blend until thick and creamy. Add more liquid if necessary.
- Adjust sweetness to taste then transfer to bowls. Mix in chocolate or cacao nibs.
- Serve immediately or store in the freezer.
