(non-dairy ice cream)

Serves 2 servings

Ingredients:

  • 3 Emmy's Organics Vanilla Bean Coconut Cookies
  • 3 frozen bananas
  • ½ cup full fat coconut milk
  • ⅓ cup fresh mint leaves *chopped
  • 2 tbsps coconut sugar
  • 1 tbsp vanilla bean powder
  • 1-2 tsps green spirulina or matcha powder *optional for color
  • non-dairy chocolate chips or cacao nibs

 

Method:

  1. Add everything except chocolate to a high speed blender. Blend until thick and creamy. Add more liquid if necessary.
  2. Adjust sweetness to taste then transfer to bowls. Mix in chocolate or cacao nibs.
  3. Serve immediately or store in the freezer.
