Fudgy Chocolate Coconut Brownies

Ingredients:

  • Emmy’s Organics Vanilla Bean Coconut Cookies
  • ½ cup applesauce
  • ½ cup chocolate chips (melted)
  • 3 eggs (or 3 flax eggs)
  • ¼ cup coconut sugar
  • ¼ cup cacao powder
  • ½ cup tapioca flour
  • ½ tsp salt
  • 1 tsp vanilla
  • 2 tbsp. almond butter (for drizzle on top)

 

Recipe:

  1. Mix together all the wet ingredients first. Melt the chocolate chips and mix with the applesauce, eggs, and vanilla. It helps if the ingredients are not super cold, otherwise the chocolate hardens quicker
  2. Once well mixed, add in all the dry ingredients except for the cookies. Whisk well to ensure there are no clumps and all the ingredients have been well combined
  3. Break up the cookies into smaller pieces and mix them into the batter
  4. Pour the batter into a lined 8x8 brownie dish and drizzle with almond butter. Pour the almond butter into lines and then use a toothpick to pull across the lines to create the design. A totally optional step, but who doesn’t love the almond butter?
  5. Bake at 350 for about 30 minutes or until the edges are golden brown
  6. Cut and cool!
