Dark Chocolate Coconut Crunch Bars

3 cups brown rice cacao crisp cereal

3 Emmy’s Organics Dark Cacao Coconut Cookies

3 tbsp cacao powder

1/4 cup maple syrup

1/3 cup peanut butter

1/4 cup berry jam

Crushed beet chips 

  1. Add cereal, coconut cookies, and cacao powder to a food processor and lightly pulse just so that they are mixed together
  2. In a bowl, stir peanut butter and maple syrup and add cereal mixture
  3. Line a loaf pan with parchment paper and press cereal and peanut butter mixture to form bars
  4. Place in the refrigerator for at least 30 minutes
  5. Once cooled, top with berry jam and crushed beet chips
  6. Cut into squares and enjoy!
