Coconut Butter Cookies with Chocolate Coconut Topping by @thenakedbroccoli
Ingredients:
3 Emmy’s Organics Chocolate Chip Coconut Cookies
3 Emmy’s Organics Dark Cacao Coconut Cookies
1 1/2 cups oat flour
1/4 cups coconut sugar
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
1/4 cup maple syrup
1/2 cup coconut butter, melted
1/4 cup chocolate chips
Directions:
- Preheat the oven to 350 F
- Sift flour, 1 Dark Cacao Coconut Cookie, 1 Vanilla Bean Coconut Cookie, coconut, sugar, baking powder, and baking soda in a bowl
- Whisk vanilla extract, maple syrup, and coconut butter in a separate bowl
- Add dry to wet ingredients and mix just until combined
- Using a mini ice cream scoop, scoop cookies into a parchment-lined baking sheet
- Bake cookies for 8-10 minutes
- Melt chocolate chips in a microwave safe bowl and crumble chocolate chip and dark chocolate cookies together in a separate bowl
- Let coconut butter cookies cool and dip each half in melted chocolate
- Sprinkle crumbled coconut cookies on top and place in the refrigerator for 10 minutes or until chocolate is set
- Store in the refrigerator
