Coconut Butter Cookies with Chocolate Coconut Topping by @thenakedbroccoli

 

Ingredients:

3 Emmy’s Organics Chocolate Chip Coconut Cookies

3 Emmy’s Organics Dark Cacao Coconut Cookies

1 1/2 cups oat flour

1/4 cups coconut sugar

1/2 tsp baking powder

1/2 tsp baking soda

1 tsp vanilla extract

1/4 cup maple syrup

1/2 cup coconut butter, melted

1/4 cup chocolate chips

 

 

Directions:

  1. Preheat the oven to 350 F
  2. Sift flour, 1 Dark Cacao Coconut Cookie, 1 Vanilla Bean Coconut Cookie, coconut, sugar, baking powder, and baking soda in a bowl
  3. Whisk vanilla extract, maple syrup, and coconut butter in a separate bowl
  4. Add dry to wet ingredients and mix just until combined
  5. Using a mini ice cream scoop, scoop cookies into a parchment-lined baking sheet
  6. Bake cookies for 8-10 minutes
  7. Melt chocolate chips in a microwave safe bowl and crumble chocolate chip and dark chocolate cookies together in a separate bowl
  8. Let coconut butter cookies cool and dip each half in melted chocolate
  9. Sprinkle crumbled coconut cookies on top and place in the refrigerator for 10 minutes or until chocolate is set
  10. Store in the refrigerator
