Chocolate Peanut Butter Coconut Truffles by @kaleitwithkayliIngredients:Dough:3 bags of 2oz Emmy's Organics Peanut Butter Coconut Cookies3 bags of 2oz Emmy's Organics Chocolate Chip Coconut Cookies2 tablespoons coconut oil1-2 tablespoons unsweetened almond milk1/4- 1/2 cup dairy free chocolate chipsTopping:1 cup of dairy free chocolate chips1-2 tablespoons coconut oilMini chocolate chips for topping *optional*Directions:Dough:Blend in food processor the peanut butter cookies, chocolate chip cookies, coconut oil, unsweetened almond milk. Process until combined. Stir in chips so they stay whole. Roll into balls. Makes about 13-15 balls. Freeze 30 minutes.Topping:Melt chocolate chips with coconut oil on 30 second intervals in microwave. Coat balls and immediately top with mini chocolate chips.
