Chocolate-Covered Peanut Butter Peppermint Bites by @cleaneatsbytay
3 Tbsp Coconut Oil
2 Cups Melted Vegan Dark Chocolate
1/4 Tsp Peppermint Extract
Candy Cane (optional)
Melt vegan dark chocolate with coconut oil by microwaving in 30 second increments, stirring and mashing with a fork between each, or in a small pot on the stove on low heat. Add in peppermint extract to the chocolate.
Dip the Emmy's Organics Peanut Butter cookies and place on a cookie sheet covered with parchment paper.
Sprinkle some crushed candy cane onto each and freeze for 1 hour. Store in fridge!
