Fiber Can Be Sexy

When you hear the word “fiber” what comes to mind? Oat bran, prunes, and fiber powders that do nothing but cause not only your taste-buds to cringe, but your stomach to turn, are the typical answers.

 

Fiber plays a huge role in overall health, contributing to better digestion, improved cholesterol metabolism, stabilizes blood sugar levels, can help in maintaining a healthy weight, and can aid in preventing disease.

 

Due to fibers seemingly endless list of health benefits, I am sure it comes as no surprise that I am a huge fan of it. However, I am not a fan of BORING; boring meals to be even more specific. I can promise that you will never see a bowl of oat bran or fiber water in front of this gal. What you will see, though? Some tasty dessert!


One of my favorite ways to incorporate fiber into my diet, is by secretly adding it to all of my healthy treats. This way, you can indulge in something that tastes decadent while also promoting your health. I think that can be considered a win-win in anyone’s book and offers a comeback when someone catches you sneaking to your freezer at 1 AM, to reach for another Raspberry Fudge Brownie.

 

One of my favorite go-to, fiber-rich, recipes are my Chocolate Chip Cookie Dough Chunk Cheesecake Bars. The crust is made from Emmy’s Organics Chocolate Chip Coconut Cookies, which are made from whole food, nutrient dense ingredients, including coconut, offering a whopping 2 grams of fiber per cookie. Which, I don’t know if you are aware, is basically just as much as 1 cup of chopped broccoli. Can I get a hallelujah!


So if you are having trouble hitting your fiber goals (it is recommended that the average male reaches a daily value of 38g & the average female reaches a daily value of 25g), I highly recommend having some fun in the kitchen and baking yourself a fiber rich, decadent treat!
