We are always experimenting in the kitchen and playing with new recipes on a weekly basis. Here are a few of our favorite gltuen-free, vegan and raw food preparations. Try them out and tell us what you think!
RAW VEGAN RANCH DRESSING

This was a successful experiment! I had made some garlic cashew cream to add to a soup I made the night before and there was still some left over, so I made a version of ranch dressing with it. Try it out:
3 cups soaked cashews
3 cups water
2 cloves garlic
Blend in a blender until smooth (consistency should be like actual cream. if its too thick add some more water).
Add to blender:
1/2 cup lemon juice
1/4 cup Braggs lLiquid Aminos (soy sauce alternative)
1/2 teaspoon Himalayan salt
2 Tablespoons dried parsley (this could be fresh parsley, but I would add more of it. Dill would be nice too)
Blend the rest of the ingredients until smooth. Taste and fix accordingly…
Add to your favorite salad and top with our amazing and crunchy Sprouted Sunnies. Or, use as a dip for sliced veggies.
SESAME CITRUS DRESSING

More salad dressing! What an opportunity to re-create your love of raw greens! This is not 100% raw, but could easily be made that way…
1/4 cup toasted sesame oil (replace with cold pressed sesame oil for the raw version)
1/2 teaspoon fresh grated ginger
1/4 cup + 3 Tablespoons fresh citrus juice (orange or mandarin orange)
1/4 cup fresh citrus fruit
3 Tablespoons Braggs liquid aminos
Blend in a small blender (we use a Magic Bullet) until smooth. Dress on a bed of your favorite salad combinations. Above are local salad greens with local tomatoes and shredded local kohlrabi topped with the amazing Sprouted Sunnies. For an extra treat, lightly toast some sesame seeds in a pan and add for an extra nutty flavor!
LOW FAT VEGAN ALFREDO SAUCE

This is a staple in our house during the cooler months. It is an amazing addition to any dish for a creamy and decadent experience!
4 cups steamed cauliflower (steam until soft)
1/2 cup coconut oil
2 (generous) Tablespoons mellow white miso paste
Place all ingredients in a blender and blend until smooth. A high speed blender is not necessary. Give it a try and see if you want to add any extra miso for a sharper taste. Blend again if you do!
Add to a bowl of gluten-free noodles with veggies for a warm and satisfying meal!
